The knives from the "Sushi Line" have blades made of special 4199 Nitrogen B stainless steel with a high Carbon content (DIN 1.4199 X50 CrMov15 N).
A rigorous thermal treatment of the blades guarantees a very high hardness and a uniform microstructure, essential for obtaining a strong and long-lasting blade edge.
In respect of Oriental tradition, the sharpening is done on one side only. This characteristic, combined with the high quality of the steel, the thermal treatment, and the particular care in the finishing process, allows for a clean cut, enhancing the quality of the cooked products.
The food-grade POM handles are perfectly balanced with the blade.
