Knives from the "Sushi Line" have special stainless steel blades 4199 Nitrogen B with high carbon content (DIN 1.4199 X50 CrMov15 N).
A strict thermal treatment of the blades ensures very high hardness and a uniform microstructure, essential for achieving a strong and durable cutting edge.
In respect of Oriental tradition, the sharpening is done on one side only. This feature, combined with the high quality of the steel, the heat treatment, and the particular care in finishing work, allows for a clean cut that enhances the quality of cooked foods.
Food-safe POM handles are perfectly balanced with the blade.
