The "Sushi" line knives are produced with special stainless steel Nitro B-4199 with high carbon content, enriched with noble elements such as nickel-chromium-molybdenum-vanadium. Rigorous heat treatment allows an high hardness of the blade (57-59 HRC) and a uniform microstructure to achieve a strong and durable cutting edge of the blade.
As per oriental tradition, the sharpening is made on one side only.
The POM riveted handles, suitable for food, is perfectly balanced with the blade.
