The word SANTOKU in Japanese means "3 virtues", in fact it can be used to cut meat, fish and vegetables.
The shorter blade shape and the straight cut compared to the classic western chef's knife make it particularly versatile and at the same time manageable for mincing.
In this version the blade is with alveolus, which act as non-stick creating an air chamber between the cut food and the blade
